Lo sciroppo di agave, noto anche come nettare di agave o miele di agave, è il succo vegetale dolce che si estrae dalle foglie dell'agave, una pianta dall'aspetto simile a un cactus o all'aloe vera. È uno degli edulcoranti più sani e naturali, poiché ha un maggiore potere saziante dello zucchero, e riusciamo a dolcificare la nostra bevanda aggiungendone una quantità minore rispetto allo zucchero. Questo sciroppo di colore dorato scuro ha una consistenza viscosa, il suo odore è neutro e il suo sapore è leggermente più intenso dello sciroppo di agave crudo. Essendo di origine vegetale, è anche un perfetto sostituto vegano del miele. In cucina viene solitamente utilizzato per preparare le classiche barrette di cereali (avena, bacche di goji e cioccolato), per preparare biscotti stile Digestive, cheesecake, biscotti al cocco e cioccolato e nei panini dolci. Il sapore dello sciroppo di agave non crudo è leggermente più intenso di quello crudo, simile al sapore dello zucchero di canna o del caramello. Conservare in un luogo fresco e asciutto (sotto i 25°C). Quando possibile, evitare l'esposizione alla luce.
